I just saw a segment on ABC’s Nightline about school lunch. The jist of the story was since new government mandated food “choices” have been added to the menus “plate waste” has increased by 90-97% in most schools! Kids, especially high school age kids just will NOT be told what they have to eat.

The do-goodies over at the USDA now force schools to limit the amount of calories a child can be served (no second helpings!) by grade level. They also force the schools to cut way back on salt, sugar, ketchup, etc. which makes the food bland and tasteless. And kids must be served vegetables whether they want them or not- so the kids throw 90-97% of it away.

This article is not about nutrition.

Mayor Bloomberg of NYC has recently outlawed soft drink sizes above 16 ounces. He has banned products from Lauer Custom Weaponry because Mayor Doomberg thinks their paint schemes make real guns look like toys. Hizzonner has banned smoking, trans-fat French fries, baby formula and now there is talk of banning large size popcorn and milkshakes!

This is NOT about nutrition.

I lived in Chicago for 10 years; Mayor Daley dedicated his life to denying Second Amendment rights to the citizens of his city. For 30 years people were not able to even OWN a handgun in the city limits, unless you were a criminal or politically connected- (any difference?).

The same right I exercise everyday here in Indiana would have bought me an instant felony in Chicago!

This is NOT about public safety.

I am 49 years old, and in my lifetime I have seen many freedoms taken from Americans: You HAVE to wear a seat belt; You CAN”T burn leaves anymore; You must SUBMIT (I HATE that word!) to a drug test if you want to work; You CANNOT buy 100 watt light bulbs for your home; You can be charged with a CRIME if you utter certain words that offend SOMEONE (that list of words grows everyday); You CANNOT punish your child; You MUST buy health insurance (Thanks, Obama); If you transact more than $600 a form MUST be filled out and SUBMITTED (there’s that word again!) to the Federal government; You CANNOT breed or posses certain livestock that the USDA deems harmful and the ones allowed must now be registered with the government; You MUST have your children inoculated with whatever the government requires; You CANNOT farm, improve or otherwise make use of YOUR LAND if the EPA says you will be harming the spotted-snail-darter or whatever; You and your children MUST SUBMIT (again!) to what is, in effect, a strip search if you need to fly somewhere in an airplane. And we walk around under the constant eye of pervasive surveillance in the name of security. I could go on for the rest of the month about lost freedoms and mandatory requirements to be an American citizen, but you get the idea.

This article IS about control!

The personality type that wants to be a politician, craves power- control is power. The personality type that craves power is usually paranoid- knowing that others like him are waiting to take the power away for themselves. These people imagine trouble where there is none. They justify tighter control for the “greater good”. Individualism is viewed with suspicion and even fear. The Left loves to throw around the term “lone wolf”. Anyone who denies the collectivist mindset is a kook or even a threat!

Telling us what we can and cannot eat and drink is just the start.

Do you doubt that if it were possible some fascist on The Left would make certain thoughts a crime!!! Or better yet actually control our thoughts for the “good of society”!!! The ONLY reason this is not being done is because the technology does not exist- yet.

30 years ago the things written above would NOT have been tolerated by Americans. Now they are common place.
What common place injustices will we tolerate 30 years from now?

If an astrological aspect could wax into a Full Moon, making the tides run to high and low extremes and induce people to act “Looney” and “Moon-moody” all over the planet, the Square of Uranus in Aries with Pluto in Capricorn has entered its Full Moon phase for 2012. As I write this, these two outer planets that influence the mass mind of human mood have been in an exact Square of six degrees since Pluto went direct course out of its retrograde back on 18 September. That is when the crazed human ape in the zoo called Earth started throwing doo doo at the fans, as it were. A riotous vibe exploded across the world as the forces of change, the deep seated desire for people power (Uranus in Aries) found its perfect storm of friction with the forces of suppression, status quo plutocracy (Pluto in Capricorn). Uranian upheaval rampaged on the streets in a rage against the immovable Capricornian machine of banks and two-faced superpowers. People around the world are peeved to piss off point, running about like chickens with their heads cut off – a leaderless rabble in the throes of collective mob catharses bouncing off the walls against the slightest of old nationalistic and religious slights. In Predictions for 2012, written and published at the end of December 2011, my oracle apparently foresaw these riots spreading across the world:

Democracy on the rise in the first half of 2012 collides with the forces of corporate Dominion, of ivory towered oligarchies who aim to suppress it in the second half of 2012. A reawakening of democratic dissent ascending in streets around the world will frighten the dominators. The oligarchies will let slip the dogs of police rioting around the world to put pepper spray and riot stick to skull to knock.

Chapter One:
Dominion versus Democracy

Usually when Pluto enters Capricorn every 248 years one experiences the birth of mass discontent of up and coming classes. The modern middle class was born the last Pluto time, in the British Colonies and across Europe. Then as now, we entered the first years of this long transit (2008-2024) with the Status Quo successfully controlling most Middle Class dissent. The monarchial aristocracies of the 1770s, like the new CEOligarchy of Corporate aristocracy, initially are successful suppressing popular movements. For the opening years of the last Pluto-in-Capricorn transit, the tyranny of King George III stifled dissent until four years before the end of the transit in 1777. That is when the first Tea Party in 1773 threw British tea into Boston Harbor in reaction to King George’s onerous “One-Percenter” tax on tea. Jump ahead 250 years. A new Tea Party demonstrating against taxes came to power in the US House of Representatives during the midterm elections of 2010. This time, however, King George Corp. is far more subtle and sophisticated than George III of old. Today’s corporate aristocracy did not fight it. They bought it. The new Tea Party has been compromised. It sold its ideas to the very people who would use their rebellion not to return America government to the purity of its constitutional virtues but to destroy the government and the people’s constitutional rights, in a creeping coop to replace the US democracy with a new cycle of global Fascism that is corporate-business based. Even now dissent in America brings out highly militarized police forces of a Terrorist Security Industrial Complex created after the 9-11 attacks that more often than not identifies street protesters practicing their First Amendment Rights of free speech and free assembly as a terrorist threat. Often protesters are arrested in their beds before the demonstrations happen. My oracle anticipated this development a year ago:

The government will countenance using this legislation against American citizens as they view free speech as a new kind of terrorism, requiring even the US military to ignore the Fifth Amendment rights of US citizens “calling them enemy combatants” to, in effect, initiate mass arrests to restore “order” in the streets.

Predictions for 2012
Chapter Four:
The American Spring

Sometimes a plutocratic Capricornian power suppresses a rebellion by buying it. Yet, with the “Occupy Walls Street” or “99-percenter” movements, the One-percenter corporate interests exploit the weakness of mobs presenting grievances in the streets, without focus or leadership. The Tea Party is bought; the OWS are not a rabble of rebels without a cause but rebels without a direction or discipline to gain political power to make changes they demand. They play homeless in camps in parks and like the homeless, all you need is a good police riot to flush the rabble out of town.

Again, I must reiterate, that these are the early years, the early degrees of Pluto’s transit through Capricorn. What the corporate aristocracy suppresses today will push back in the near future. There will be revolutions, for good or ill across the world, just like the last time Pluto in the final years of its transit through Capricorn witnessed the signing of the Declaration of Independence and the launching of the American Revolution that brought the age of modern democracy into the world.

America in this current return of Pluto into Capricorn is no longer the trailblazer of this new wave of people power but a follower. The Pluto era of revolutions this time began in North Africa and the Middle East in the Arab Spring in 2011. Though my oracle detailed a similar thing taking place in an “American Spring” by 2012, so far, the seat of the most powerful CEOoligarchic influence on the world has repressed that spring. I will not say what I wrote in my forecasts for 2012 will be proven wrong. I will predict that the details my oracle listed in Chapter Four of millions of Americans taking to the streets, marching on Washington DC have only been delayed one to two years.

Currently, Pluto’s square with Uranus the mass-minded revolutionary has produced a fever spread of mob catharsis around the world, especially in the last few weeks of the exact degree of the square. Rage crosses the world, mindless, irrational, just breaking things, burning embassies, mugging and murdering. There is a lot of collective anger that the smallest trigger, like a stupid fifth-rate movie trailer for the American-made flick called “Innocents of Islam” can spark protests across one-sixth of the human race living in 32 nations with sizable minority or majority populations of Muslims. Unconscious rage, once unleashed will take its own course and leave the smoldering match behind and forgotten as the fire mindlessly runs its course. The Islamic eruption that saw a US Ambassador to Libya killed and US consulates and embassies stormed, vandalized and sometimes torched in Egypt, Libya, Yemen, and a dozen other Muslim countries is a public venting of a half-century of suppressed rage at what is viewed as the two-faced hypocrisy of the United States in its dealings with the Islamic world.

The Western media wrings its hands and asks, “Why do they hate us?”

Wrong question.

Ask why should they like us.

The movie disparaging the Prophet Muhammad was only a trigger for over grievances. For instance, the US proclaims itself a champion of democracy while keeping the Middle East under the boot of Arab dictators it grooms and finances.

Why should they like a country that invades a Muslim country like Iraq, without any provable grounds, kills a million people to give them democratic freedoms they did not request?

How can Muslims love an America that openly pursues planning a new conflict against another Muslim nation, Iran, a fellow signatory of the Nuclear Non-Proliferation Treaty on only the presumption, but no proof, that Iran might be using its civilian nuclear program to make atomic weapons?

From the Muslim’s point of view, America ought to be putting pressure on the only country in the region that does have nuclear weapons and is effectively a rogue nuclear power that has not signed the treaty. It is that country that is destabilizing the region with nuclear proliferation. But no, America in the Muslim point of view is a hypocrite nation, looking the other way as that rogue nuclear power threatens to unilaterally attack Iran – perhaps in the next few weeks or months from now. That rogue nation in Muslim eyes is Israel.

People on the Arab streets are vandalizing US Embassies have real grievances; their hatred is against hypocrisy. And you Americans ask, why do they hate you?

Why should they love a people who can unilaterally invade and occupy a country like Iraq, on the same flimsy grounds that Adolf Hitler used to invade Poland to start the Second World War?

What is there to like about the United States when it is gearing up to strike Iran like Poland; or, supporting a similar attack from the one country that introduced these evil doomsday weapons into the Middle East in the first place, with US help.

How can America openly support the spread of democracy in an insurrection in Syria but be so silent about the same Arab Spring being violently suppressed in Saudi Arabia and Bahrain?

New deadly mystery virus discovered in Saudi Arabia

It is called Novel Coronavirus, it is deadly and it is a nightmare: it seems the virus that causes the common cold has mutated to a pathogenic strain which causes severe respiratory problems and kidney failure. It has been confirmed that this type of virus has never been found before in humans. The epicenter seems to be Saudi Arabia; to date there is one death and one person in the ICU.

The human toll so far is one man dead in the Kingdom of Saudi Arabia (a 60-year-old Saudi national) and one Qatari national with a history of travel to Saudi Arabia seriously ill in an Intensive Care Unit in a London hospital, where he is in isolation with serious respiratory problems and kidney failure.

The patient is a previously healthy 49-year-old male, a Qatari national, whose symptoms began on September 3. Before the symptoms appeared, he had traveled to Saudi Arabia (Riyadh) and by September 7 he was in an ICU in Doha, Qatar. He was transferred to London on September 11.

Laboratory tests carried out by the Erasmus University Medical Center in the Netherlands has confirmed that the virus isolate present in the latter case indicates a 99.5% similarity with the identity of the isolate obtained from the fatal case earlier this year. There is a mismatch of one nucleotide.

According to the World Health Organization, “Coronaviruses are a large family of viruses which includes viruses that cause the common cold and SARS. Given that this is a novel coronavirus, WHO is currently in the process of obtaining further information to determine the public health implications of these two confirmed cases”. These cases, however, are not SARS (Severe Acute Respiratory Syndrome, which broke out in the Far East in 2002-2003, causing nearly one thousand fatalities worldwide and was linked to civets).

The WHO (as usual) does not recommend travel restrictions.

Several questions are raised here:

1. Does the mismatch in the nucleotide mean that the virus is evolving?

2. Are we about to see a deadly remake of the Swine Flu Pandemic (A H1N1) of 2009, when the authorities which are supposed to protect us stood back and limited themselves to informing the world’s population as to how the virus was progressing?

3. Does swift and decisive action by the authorities mean that the pharma industry loses out on billions in revenue from research and development and commercialization of medicines?

After a day of watching the fog roll in and then a drizzly morning I found out that even when you have a hate/love relationship with a beef cow they are just on the farm too long not to build some bond with.  Eddie from Barstow Custom Butchering came by and dropped off pork so I was busy organizing it in the freezer and could not be down in "livestock central" as Eddie began his job.  When I finally arrived there was nothing but a hanging piece of meat and that was fine.  I took the liver up to cut, the ox tail and the heart and tongue.  He showed me the marbling that I had attained that would be determined choice due to fat content...perfect.  Our goal is grass fed with just a touch of marbling that we add with the six weeks of grain.  Of course those of you who chose grass fed only will just be fed a little longer to attain some marbling with age versus grain.  He also invited us to come out when the cutting was done after the two weeks of aging so that we can understand all the cut choices better and relay this information to our customers in aiding them in making their choices.  A bittersweet day, but at the same time I thank the Lord for providing us with the beef with the awesome protein and amino acids that feeds my muscles that I so need to complete my daily chores.  Amen!!

Chances are, it's either hot, hot, hot where you are.... or you're feeling the (achem) social nature of summer catching up with you, and you're wanting to indulge in something healthy. I've got you covered on both fronts with this cooling, refreshing, and flavorful soup. Earlier this summer, I posted a recipe for "green gazpacho" which is soooo good if you haven't tried it yet. And, a few years back, I shared my recipe for a chunky gazpacho, made with all sorts of shredded veggies. That one was good, but this summer's version is even better! I am listing the ingredients below, but I'll leave the amounts and ratios up to you, as this should be made to taste and take into consideration what you may have on hand...
Summer of 2012's Red Gazpacho(not to be confused with Summer of 2012's Green Gazpacho!)
(2-3) organic bell peppers (I used red + yellow), seeded and rough chopped(1 small) fennel bulb, white part only, rough chopped(1-2) organic cucumber(s), peeled and rough chopped(5-7) medium organic tomatoes, rough chopped (1/4-1/2 cup) kalamata olives, pittedsalt + pepper, to taste
optional: corn relish (which I found at our local Whole Foods in the produce dept) as a topping
Pulse everything in a Cuisinart, until desired consistency. Will store for several days in the fridge. In fact, it's even better day 2+ because the flavors really start to meld.

Before everything is pulsed, it takes up much more room in the food processor....

So, I filled my bowl to capacity, and pulsed the first batch of ingredients until well-blended.




Then I added a bunch more tomatoes, and blended it again, until it reached the thickness I desired.


Voila! There you have it! So easy, so healthy and so delicious.

Whether you're packing snacks for day camp, day care, school or the day's adventure, I don't think you can ever have too much packable snack-time inspiration. So, here's a round-up of  hearty + healthy snack ideas! (All are nut-free too, in case that's a contingency in your family/camp/school/daycare.)

Before we launch into my photos of kid snacks, I just have to quickly share my latest food crush. These Beanfield's Bean and Rice Chips are soooo good. To add some veggies to this snack, I serve them along with my pea dip, spinach dip, or an edamame hummus. At the party above, I brought them along with my go-to yogurt dip. 

Here's what the packing looks like, when you're standing there in the chip aisle, looking at a dizzying away of choices! And here are a bunch of other recent snacks to inspire you...

Back to Nature Crispy Wheat crackers + Earthbound Farm's carrots + ranch dip (can you tell this is a day when I was short on time and hadn't prepped my own fruits and veggies?...)

apple slices and puffed corn cereal (again, i hadn't taken the time to prep, so store-bought it was that day... costs more, but at least they're still getting their fruits and/or veggies)

chive cream cheese (make your own by mixing chopped chives (or any other herb/shredded veggie) with organic whipped cream cheese... or buy) on celery + cucumber "coins" + one of my kids wanted yellow pepper "swords", the other wanted as many celery sticks as would fit in his tin...

last night's (leftover) spinach pizza + a kefir smoothie

carrots + organic berries + a handful of Beanfield's (bean and rice) chips


this day, I forgot our snack and we picked these "Buddy Fruits" up at our park snack bar


mini pitas (or multigrain "slider buns" like we found at the market) filled with hummus

If you saw my post over on the full plate blog's Facebook page, you know that I pulled a total dingbat move last night, starting to make lentil soup at 6:00pm... even though dinner should have been ready by 6:30 at the latest for the (hopeful) 7:00pm bedtime. Or maybe it was subliminal, and I really wanted grilled cheeses for dinner, and to not have to make dinner tonight? Either way, we had grilled cheese last night... and the lentil soup finished cooking mid-evening, and I packaged it up so we could enjoy it tonight. But first, I popped a small portion into today's lunchbox.

apple cider as a (super special, he picked it himself) treat + a small portion of lentil soup in the thermos + half a grilled Applegate ham and cheese (which he'd be enjoying cold, good thing he's not picky) + organic strawberries + English cucumber slices


As you guys know, I try to keep our meals colorful. That's the easiest way for me to know our meal is healthful, and to ensure that my children are getting a bunch of fruits and/or veggies throughout the day. No matter what I am planning for dinner/the next day's lunchbox, I try to stay ahead of the curve by having some prepped (washed + cut) fruits and veggies at the ready. This makes assembling my children's meals super easy. Here are a few more lunch boxes from last week to provide some packing inspiration.... and remind you to set aside some of tonight's dinner if you can, so your packing is simple!


organic raspberries + "rainbow" tomatoes and cucumber slices + organic strawberries + baby carrots + cream cheese and jam sandwich + Greek yogurt (don't forget to include a spoon!)


organic dried cranberries + a slice of pumpkin bread + some of the homemade "mac and cheese" (remember the re-purposing post from last week!) + steam broccoli (again, from dinner the night before) + chicken-apple sausages (yes, you guessed it-- from dinner the night before)


turkey-vegetable Bolognese (again from that week when I was re-purposing the extra cheese from the Feta-Fig appetizers... this sauce was studded with lots of cauliflower, broccoli and carrots so I didn't include an additional veggie in his lunch today) + a bit of fruit salad + a fruit smoothie

make-ahead breakfast: berry-egg bake

Our new school year kicks off this week! So, I am adding a few new recipes to our make-ahead repertoire.  To keep things simple/manageable/doable, I like to have a few basic recipes that I am very comfortable making... and then I simply vary the ingredients to give my family variety. Last September, I added a baked oatmeal into the rotation of deliciousness, and this summer I have mastered a sweet baked berry-egg dish that we absolutely love. This breakfast takes a few more steps than I usually like to do... but the end result is so worth it! And, it stores well in the fridge for several days, so it's a great recipe to make on a Saturday or Sunday morning. Then you can enjoy it another day (or two) in the busier week ahead.
Make-Ahead Breakfast: Berry-Egg Bake(makes 16 servings)stores in fridge for several days
8 Tablespoons unsalted butter2 pints of organic berries* 16 eggs (separated: yolks in one bowl, whites in another)1/4 cup vanilla extract2 Tablespoons cinnamon
*Pick your favorite kind of fresh organic berries or use a combo of different berries. You may also use frozen berries if fresh ones are out of season/too expensive. If using frozen, use 4 cups of berries or 32 ounces (which may be easier to figure out when you're staring at the packaging!).
Preheat oven to 400 degrees. 
In a large fry pan or saucepan, heat the berries and butter over medium heat until the liquid thickens (about 5 minutes) to a syrup consistency.  Pour the berries and syrup that was made into a 13x9 (or two 8x8) oven-proof baking dish(es).
Your eggs should be separated into two bowls: one with the yolks, one with the whites.
Beat the egg whites, using a hand mixer, until  stiff peaks form. Set aside while you beat the egg yolks. 
Add the vanilla and cinnamon to the bowl of egg yolks, and whisk the yolk mixture for a few minutes until well blended. 
Gently fold the yolks into the whites, then evenly spoon egg mixture over berries. Place baking dish in preheated oven, and bake for 15-18 minutes, or until top puffs up slightly, is golden brown, and knife inserted in the center of the dish comes out clean. (Depending upon your oven, it may take a few minutes more/less to cook the eggs.) The Berry-Egg Bake may be enjoyed warm, or at room temperature. It stores well in the fridge for several days, so make this big batch and enjoy it for days to come!

The berry mixture was cooked over medium heat until syrup from berries is slightly thickened, then the berries were evenly spread into a baking dish.

I added vanilla to my egg whites-- by accident! No problem! You'll see that the egg whites go from hardly anything to a large quantity once they are beaten, so be sure to start with a big enough bowl!



The egg whites were beaten until stiff peaks formed, using a hand mixer. Then, I set them aside while I worked on the yolks...

I added cinnamon and vanilla to the yolks too. Never can have too much vanilla, apparently!! But you can choose whether you want to add it to the yolks OR whites. Either is fine. In the recipe above, I have you adding them to the yolks.

Beat the yolks for a few minutes, just until frothy...

and then fold them into your egg whites...

Voila!

Now spread the egg mixture over your berries, and pop it into a preheated oven for about 18 minutes, or until eggs are cooked through. I test this by inserting a knife into the center of the dish.


And there you go! You can enjoy it now, in the company of family and friends, and/or pack some away in the fridge to enjoy on a busy weekday ahead.
